Let’s Make Coconut Lemongrass Chicken Skewers:
This lemongrass chicken recipe only uses chicken thighs. I’m not trying to say that you can’t use chicken breasts for this Thai lemongrass chicken recipe, but imma just say that chicken breast is yt people food. Most chicken breast come from female chickens, and I’m just not interested cause I’m gay…. I just prefer chicken thighs because they are a lot more fatter, and juicer as a result. They are also less likely to become super dry after cooking
Anyway this Asian chicken recipe is probably the best chicken recipe that I have ever made. This dish is usually found in Asian night markets, and is a perfect midnight snack. So I knew, as an Asian, I had to copy it. This is the perfect combination of savory, zesty, spicy, and umami.
Anyway, this chicken recipe is super easy and super delicious. This recipe may seem really daunting at first, with all of its “exotic” ingredients (the ingredients really aren’t) but it really isn’t. It would be best to use Birdseye Chili Pepper, as that is more traditional, but use any spicy chili pepper wanted. Also, the Turmeric is OPTIONAL, but gives it a more golden color. Regular curry powder should give it enough color. Just remember to adjust things to personal taste if wanted.

Thai Coconut Lemongrass Chicken Skewers
Ingredients
Marinade:
- 2 Shallots (Chopped)
- 1 Stalk Lemongrass (Chopped)
- 1 Pepper (Minced)
- 3 Cloves Garlic (Minced)
- 1 Tsp Ginger (Minced, Optional)
- 2 Tbsp Curry Powder
- ¼ Tsp Turmeric (Optional)
- ½ C Coconut Milk (Full Fat)
- 1 Tsp Oil
- 2 Tsp Fish Sauce
- 1 Tbsp Soy Sauce
- 1 Tsp Brown Sugar
- 1 Tbsp Sesame Seeds (Optional)
- 1 Stalk Scallions (Optional, Sliced)
Meat:
- 1 Lb Chicken Thighs (Filetted, or Cubed)
Instructions
- Mix the marinade ingredients together.
- Add in the cut Chicken thighs and mix thoroughly to coat everything. Cover, Chill, and let the chicken thighs marinate for at least 30 minutes, preferably 2 hours or overnight in the fridge.
- Soak 12 wooden skewers in water for at least 30 minutes.
- Skewer the meat and Airfry/bake at 400F for 5-10 Minutes or Grill until cooked and charred.

Coconut Lemongrass Chicken Skewers: EASY & DELICIOUS:
1.Mix Shallots, Lemongrass, Chili Pepper, Garlic, Ginger, Curry Powder, Coconut Milk, Fish Sauce, Soy Sauce, Oil, and Brown Sugar together. The Oil in the marinade will improve the browning of the skewers Sesame Seeds, Scallions and Turmeric are Optional. Any spicy chili pepper will work, but Birds Eye Chili Peppers are more traditional.

2. Add in the cut Chicken Thighs and mix it thoroughly with the sauce to coat everything. Cover, Chill, and let the chicken thighs marinate for at least 30 minutes, preferably 2 hours or overnight. The longer the chicken marinades, the more color and flavor it will retain.

3. Soak 12 skewers in water for at least 30 minutes. Doing so will prevent the skewers from burning and catching on fire when cooking.

4. Skewer the meat and Airfry/bake at 400F for 5-10 Minutes or Grill until cooked and charred.
