Notes
Let’s Make Pearled Rice Meatballs
Lunar New Year is here, so let me show you my family tradition. My mom’s super easy dumpling recipe–that doesn’t even need a wrapper. My mom makes this dumpling every year and it’s very delicious for the low amount of effort put in. I personally hate fold a wrapper, which further highlights how great this recipe is. So, let’s make pearled rice dumplings.
Also, I have no idea why it’s called pearled rice, when the rice is rather oblong. I guess because if you are Asian, rice has the significance of wealth and wealth also is symbolized by jewelry like pearls and gems. Or, Asians just have bad eyes sight and this the rice looks like pearls or something.
My mom doesn’t really make this recipe every year, because I took over her job–perhaps immigrants are taking jobs away (from another immigrant). Terrible joke…. I do this every year because, I enjoy minimum effort and high reward situations. Also, because I prefer cooking over my mom. My mom is just a terrible cook in general.
Make sure you soak the glutinous rice over night before rolling the meatballs into it. Doing so will ensure that your rice isn’t undercook and has a nice chewy consistency after steaming.

Let’s Get Cooking: Pearled Rice Dumplings
1. Mix together Scallions, Grated Ginger, Ground Pork, Egg, Black Pepper, White Pepper, and Soy Sauce together until homogenous. Add more seasoning if you want. I personally don’t want to go overboard with the salt

2. With 1.5 Tbsp of the meat filling, flick the filling onto the palms of the hands and continuously use a spoon to flick and roll the filling into the shape of a ball. Place the meatballs onto a separate dish. Alternatively, just use a cookie scoop to scoop out round balls.

3. Roll the meat balls in the Soaked Glutinous Rice and place onto a parchment lined steamer basket. If the rice has not been soaked, just put the meatballs into the fridge and soak the rice now. The rice has to soak for at least 1-2 hours, although I have had it work after soaking for 30 minutes. Optional, put on a little topping of extra rice on the dumplings for a cone hat.

4. Steam for 18-20 minutes.
