Let’s Make: Spicy Peanut Noodles. A 15 minute easy, delicious, and creamy noodle recipe. The extra kick from the peppers truly bring the peanut butter into a different dimension of flavor. This original recipe is my own spin off of a elusive Thai peanut butter noodle that I encountered once. I can’t go back to the Thai reestuarnat that I originally had it cause apparently they don’t have it on the menu anymore. Upon deeper digging, the owner of there restaurant stopped selling this noodle, because they fired their original chef. The Owner said that the chef was a drug addict and dirty. But I don’t really care, that chef’s food was really addictive. I really think the owner really screwed himself over by firing the chef. My recipe is pretty close, it’s just missing the meth I think.
If you aren’t a fan of peanut butter, you can always swap it out with sunflower seed butter or almond butter. I find I like almond butter the best, because it is a little bit cheaper than sunflower seed butter. I am a broke bitch after all–as much as I hate to admit it.

Spicy Peanut Noodles
Ingredients
Ingredients (Adjust to Taste):
- 2 Tbsp Peanut Butter
- 2 Birdseye Chili Pepper (Crushed & Optional)
- ½ Tsp Sugar (Optional)
- ¼ Tsp Chili Oil (Optional)
- 1 Tbsp Rice Vinegar
- 3 Tbsp Stock (Any Stock Will Do)Ø
- 1 Tsp Soy Sauce
- ½ Tsp Sesame Oil
- 1 Tsp Garlic (Grated)
- 12 oz Cooked Noodles
- 1 Persian Cucumber (Jullienned)
- ½ Carrot (Jullienned)
- Pinch Toasted Sesame Seeds
- Pinch Toasted Peanuts (Crushed)
Instructions
Procedure:
- Mix all of the ingredients together excluding the cucumbers, noodles, carrots, sesame seeds, and crushed peanuts until it becomes a homogenous sauce.
- Add in noodles and mix well. Top with cucumbers, noodles, carrots, sesame seeds, and crushed peanuts.

15 Minute Spicy Creamy Peanut Noodles
- In a bowl, mix together Peanut Butter, Birdseed Chili Pepper, Sugar, Chili Oil, Rice Vinegar, Stock, Soy Sauce, Sesame Oil, Garlic. Add more Stock or some hot water to thin out the sauce if needed


2. Mix in the noodles with the sauce made in step one, and top with Cucumbers, Carrots, Sesame Seeds, and Crushed Peanuts.
