Let’s Make: Egg Foo Young.
A classic Chinese American diner dish that many apparently enjoy. Truth be told, I have always heard of it before from my Caucasian friends, but have never tried it until 2022, when I was 19 years old. Truth be told, I was pleasantly disappointed when I had it. It was overhyped. I thought it was a mythical beast, but it wasn’t that mythical. It’s like seeing a dodo in real life, nothing mystical, just cool. Turns out, my mom was making it every other day…. I just didn’t recognize it, cause she just called it an egg pancake in Chinese.
It’s a simple and quick dish that anybody can make. It’s relatively cheap as well. It’s actually really delicious, but be careful with the sauce. Adding too much might cause a heart attack, so use it sparingly.

Egg Foo Young
Ingredients
Ingredients:
- 4 Eggs
- ¼ Tsp White Pepper
- ¼ Tsp Sugar
- ⅓ lb Shrimp
- 2 Tsp Oil
- 2 C Bean Sprout
- 2 Stem/Stocks of Scallions (Sliced)
Sauce:
- ½ C Cold Water
- 2 Tsp Cornstarch
- 1 Tsp Soy Sauce
- ¼ Tsp Dark Soy Sauce (Add more for a darker color)
- ¼ Tsp Sesame Oil
- ¼ Tsp Shaoxing Wine
- ¼ Tsp White Pepper
- 1 Tbsp Oyster Sauce
- 1 Tsp Garlic (Grated)
Instructions
Procedure:
- Mix Cold Water and Cornstarch together. Mix the other sauce ingredients together in a medium high heat pot until simmering. Add in the cornstarch mixture and reduce for about 3-5 minutes in a pot or until it becomes the desired thickness, if ballsy.
- Beat eggs, white pepper, and sugar together.
- In a oiled medium high heat pan, grill shrimp until golden. Add oil and layer on bean sprouts and sliced scallions. Pour in egg mixture & lid for 3-5 minutes on low
- Flip the egg cake, it's best to use a plate to do so, and grill the other side for 1 minutes, pour on a little bit of the sauce, and you are ready to eat. (Don't slather all of the sauce on, it just looked good on camera)

Egg Foo Young Recipe:
- Mix together Soy Sauce, Dark Soy Sauce, Sesame Oil, Shaoxing Wine, White pepper, Oyster Sauce, and Garlic together into a simmering pot on medium high head until it begins simmering. Mix together Cold Water with Cornstarch, and then add it into the simmering pot. Let the sauce reduce until desired thickness, usually when the back of a spoon can be easily coated. If ballsy, just mix everything together and then set on a medium heat and reduce.
2. Beat Eggs, Sugar, and White Pepper together.
3. On an oiled medium high heat pan, Grill the shrimp until golden (to ensure that one doesn’t get food poisoning). Add some more oil, and evenly layer bean sprouts and sliced scallions on the pan. Pour the egg mixture in and lid for 3-5 minutes on low heat or until the egg is barely runny.
4. Flip the egg cake, it’s best to use a plate to do so, and grill the other side for 1 minutes, spread on the sauce, and you are ready to eat. (Don’t slather the sauce on, as it can be overwhelming. It just looked cool on camera)
