Ingredients
  

Ingredients:

  • 4 Eggs
  • ¼ Tsp White Pepper
  • ¼ Tsp Sugar
  • lb Shrimp
  • 2 Tsp Oil
  • 2 C Bean Sprout
  • 2 Stem/Stocks of Scallions (Sliced)

Sauce:

  • ½ C Cold Water
  • 2 Tsp Cornstarch
  • 1 Tsp Soy Sauce
  • ¼ Tsp Dark Soy Sauce (Add more for a darker color)
  • ¼ Tsp Sesame Oil
  • ¼ Tsp Shaoxing Wine
  • ¼ Tsp White Pepper
  • 1 Tbsp Oyster Sauce
  • 1 Tsp Garlic (Grated)

Instructions
 

Procedure:

  • Mix Cold Water and Cornstarch together. Mix the other sauce ingredients together in a medium high heat pot until simmering. Add in the cornstarch mixture and reduce for about 3-5 minutes in a pot or until it becomes the desired thickness, if ballsy.
  • Beat eggs, white pepper, and sugar together.
  • In a oiled medium high heat pan, grill shrimp until golden. Add oil and layer on bean sprouts and sliced scallions. Pour in egg mixture & lid for 3-5 minutes on low
  • Flip the egg cake, it's best to use a plate to do so, and grill the other side for 1 minutes, pour on a little bit of the sauce, and you are ready to eat. (Don't slather all of the sauce on, it just looked good on camera)

Notes

Mirin or Cooking wine can substitute Shaoxing Cooking Wine. Just add the same amount according to the recipe.
More Dark Soy Sauce can be added into the sauce for a darker color.
Don't slather all of the sauce on it, as it can be too overwhelming and salty.
