Let’s Make: Soy Sauce Ramen Eggs. Fuck paying $3 at a Ramen shop for these opulent eggs when they are super easy and cheap to make. The rich custardy yolk and marinated egg whites work perfectly as a snack and a side.
These eggs only actually take three ingredients to make at the very least, but I added some completely optional ingredients to give a little boost. These optional ingredients are listed with “(Optional)” in the recipe card. You only actually need egg, soy sauce, and Mirin to make. The marinate can be re-used marinate more eggs, meat, and tofu.
The dark soy sauce can be omitted but give the eggs are really dark color. This means that you can add more or less if you want.
I prefer to boil the eggs for 6-7 minutes for a custardy egg yolk, but boil it longer if you want the yolk to be more set.

Ramen Eggs
Ingredients
Ingredients:
- 6 Eggs
- 1 Tbsp Vinegar (Optional)
- 4 Cups Boiling Water
Shoyu Marinade (Add to Taste):
- ¾ C Water
- 3 Tbsp Soy Sauce
- 1 Tbsp Dark Soy Sauce (Optional,Add more for a darker color if desired)
- 1 Stalk of Scallion (Knotted, Optional, Add more if wanted)
- 3 Chili Peppers (Optional)
- 3 Slices Ginger (Optional)
- 2 Tsp Brown Sugar (Optional)
- 2 Star Anise (Optional)
- 1 Tbsp Mirin
Instructions
Procedure:
- In 4 cups of boiling water, add in vinegar, and cold eggs. Lid and boil for 6-7 minutes. Immediately dunk into an Icebath until completely cool (About 1 hour), then peel.
- In another pot, bring shoyu marinade ingredients to a simmer for three to five minutes. Let cool
- In a container, put the eggs in and cover with the shoyu marinade, with all of the spices and everything. Cover and chill for 2-24 hours.

- In 4 cups of boiling water, add in vinegary and cold eggs. When the last egg is dropped in, set timer for 6-7 minutes for an opulent yolk, but boil longer for a more solid yolk if wanted. After boiling, immediately put the eggs in an icebath Then, allow the eggs to fully cool down, this takes about an hour. Then peel the eggs.


2. In a small pot, boil together Soy Sauce, Dark Soy Sauce, Knotted Scallion Stalk, Chili Pepper, Slices of Ginger, Brown Sugar, Star Anise, and Mirin. Simmer for 3 minutes at least.
3. Put peeled eggs into an air-tight container and pour the marinate over them, the spices and everything as well. Put a paper towel on top of the marinating eggs to prevent a little circle of egg white from not marinating, if wanted. This will make it so that every part of the egg is marinating. Put them in the fridge, and let them marinate for about 2 hours, or longer for a darker color. This is the time where the yolks will thicken and become super rich.
