Ramen Eggs

Yolky Ramen Eggs marinated in soy sauce is super easy to make at home and insanely delicious. It's an easy and healthy way to elevate every meal. Something that I will never get tired of. Here is the recipe on how to make the prized custardy and gooey eggs seen at expensive ramen places.

Ingredients
  

Ingredients:

  • 6 Eggs
  • 1 Tbsp Vinegar (Optional)
  • 4 Cups Boiling Water

Shoyu Marinade (Add to Taste):

  • ¾ C Water
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Dark Soy Sauce (Optional,Add more for a darker color if desired)
  • 1 Stalk of Scallion (Knotted, Optional, Add more if wanted)
  • 3 Chili Peppers (Optional)
  • 3 Slices Ginger (Optional)
  • 2 Tsp Brown Sugar (Optional)
  • 2 Star Anise (Optional)
  • 1 Tbsp Mirin

Instructions
 

Procedure:

  • In 4 cups of boiling water, add in vinegar, and cold eggs. Lid and boil for 6-7 minutes. Immediately dunk into an Icebath until completely cool (About 1 hour), then peel.
  • In another pot, bring shoyu marinade ingredients to a simmer for three to five minutes. Let cool
  • In a container, put the eggs in and cover with the shoyu marinade, with all of the spices and everything. Cover and chill for 2-24 hours.

Notes

The vinegar in the boiling water will actually make the eggs easier to peel.
You really only need soy sauce, eggs, and mirin to make this recipe, but the optional ingredients just gives the recipe an extra boost.
Boil 6-7 minutes for a custardy and rich yolk. Boil longer for a more set yolk.
Let the Eggs cool down completely in the ice bath, before cooling. It makes it a lot easier to peel.
Let the eggs fully marinate for the yolks to become opulent like in the video.
The eggs only need to marinate for 2 hours or less. The longer it marinates, the darker the eggs will become. 
Put a paper towel on top of the marinating eggs to prevent a little circle of egg white from not marinating, if wanted. This will make it so that every part of the egg is marinating.
The marinate can be re-used marinate more eggs, meat, and tofu.
