Ingredients:

  • 180 g Soba Noodles (~1 Handful of Noodles)

Cold Dipping Sauce:

  • ¼ C Soy Sauce
  • ¼ C Water
  • ½ C Dashi Broth (Anchovy Stock, or Any Stock)
  • 1 Tbsp Mirin
  • 1 Tsp Ginger (Grated, Grate more for garnishment)
  • 1 Splash of Lemon
  • 1 Tsp Scallions (Chopped, cut more for garnish)
  • ½ Tsp Sugar

Garnish:

  • Pinch Sesame Seeds
  • Pinch Ginger (Grated)
  • Pinch Scallions (Chopped)

Instructions

Procedure:

  • Mix all of the dipping sauce ingredients together, and boil for three minutes then let it cool by adding ice into it
  • In a large pot of water, boil the soba noodles for 3 minutes or longer. I like my noodles chewy, so I boil them for 3 minutes. Drain the noodles, wash in cold water until the noodles are cold, and drain again.
  • Garnish noodles and sauce, and eat cold.

Notes

You can always prepare the sauce and store it for about a week and a half in the fridge.
